The communal garden at Upper Raymond’s is going from strength to strength, with residents receiving bowls of freshly picked tomatoes and chard.
There were so many tomatoes that the community took the opportunity to make the first batch of Newbury Almshouse Trust Green Tomato Chutney. Proctor Roz helped out by providing labels, and apparently the hardest part was getting off the skins of the green tomatoes!
Born in 1927, Mary is our oldest resident at Upper Raymonds. Here she is receiving a jar of our chutney.
Newbury Almshouse Trust Green Tomato Chutney
1.5kg of green tomatoes, skinned and finely chopped
225g onions, finely chopped
225g apples, peeled, cored, and finely chopped
25g pickling spice tied in a muslin
600ml vinegar
225g soft brown sugar
70g sultanas
2 tsp salt
Put all the ingredient in a pan and boil gently until soft and thick. Remove the spice and pour into warm, sterilised jars.
